Tasting notes

The wine shows a nice light pink color with nuanced salmon reflects. On the nose, appear first red fruits aromas like strawberries and in a second time delicate citric aromas with a hint of watermelon. On the palate, the acidity is well balanced by the roundness given by the barrel fermentation process; the persistence of complex fruity aromas in the mouth make this dry rosé an elegant wine.

Pairing

As it is a complex rosé, it will pair well with a Peruvian style ceviche or a beef carpaccio with some capers and olive oil. Also, a creamy risotto of asparagus will make a perfect balance with the acidity of the wine. For a refreshing dessert you can pair with a summer fruit salad mixing strawberries, pomegranate and peaches.

Production

Terroir

SOIL: Decomposed granite originating from the Coastal Mountain Range, with a sandy-loam texture with a presence of red clays in the upper layers. Moderately fertile and easily penetrable by the roots.

Vintage Notes

CLIMATE: The Casablanca Valley is influenced by the Pacific Ocean and the Humboldt Current, resulting in constant humidity and average temperatures of 25ºC in the summer and 14ºC in the winter. The conditions in the 2019-2020 season were very favorable for the ripening, with a dry winter and warm summer. Harvest was earlier in the season to keep freshness and reasonable alcohol degree.

Vinification

HARVEST: Manual, February 10th, 2020.
VINIFICATION CELLAR: Las Palmeras.
VINIFICATION: The grapes were picked by hands early in the morning. Arriving to the cellar the grapes were destemmed and directly pressed with no previous maceration, separating the free run juice and the press. After 24 hours of static cold decantation, the must was racked. Alcoholic fermentation took place in stainless steel tanks at low temperatures between 14-16°C. A part of the wine fermented in old white barrels and stay some weeks after fermentation removing the lees. Prior to bottling the wine was fined and stabilized and filtered by tangential filtration.

AGEING: 8 months in stainless steel tanks.
